I think John expects Sherlock to sprint away again any moment - and he doesn't want to be dragged with him painfully because of the handcuffs. Better be in control then and prepared by grabbing his sleeve.
(Though - I love this picture because of its utter cuteness...

I recommend a short experiment: run alongside a friend while 1. holding hands, 2. while being handcuffed and 3, by holding on to a sleeve. Bet you come to the same conclusion as John!
