"Fries" might also be relative to the size of the chips. Even the ones you get from the supermarket can be called fries if they're the skinny ones.

To Americans, they're all fries, skinny, regular-cut,or big, thick "steak fries", all of them, whether done in a fryer or in the oven. Chips, to us, are always the skinny fried potato snack thingies that come in a bag, what the Brits call crisps. We don't call anything crisps. I realize I don't get out much, and I've (alas) never been to the UK, but this is honestly the first time I've seen the term french fries used when normally I'd expect to see them called chips. As I said, it's possible the term is creeping into the Brit vernacular, especially since they're called french fries in fast food chain places. Interesting.
