Would John ever "be" Sherlock? (since he's officially dead, I mean)

He's already got the mafia after him thinking that he's Holmes, would he actually take it that one step further & actually be Sherlock for a day, while the real Sherlock is in hiding? Would be case related & not for the fun of it

In the canon, Watson was consulted on cases after Holmes' death. And he did seek out cases to be solved, that was how he bumped into the disguised Holmes.
I'm not sure why you think the mafia are after him & think he is Sherlock. That was a mistake by one person in the second episode. No evidence that anyone else thinks this at all.

Would he? He may try but the man is suffering from PTSD he won't want to do too much in that line of work I am sure.

Mycroft’s popularity doesn’t surprise me at all. He is, after all, incredibly beautiful, clever and well-dressed. And beautiful. Did I mention that?

If they follow the canon then there is a chance that John would be trying to deal with some cases, probaly without a great deal of success. He is not dim by any means but he does not have the intellectual powers of Sherlock.

Don't make people into heroes John. Heroes don't exist and if they did I wouldn't be one of them.

Yeah, that would be quite cool to see John trying to help out on a couple of cases with varying degrees of success and that's how he runs into the disguised Sherlock. I would love them to use more disguises in Series 3.

Actually, I would really like Sherlock to be disguised as Benedict Cumberbatch. I think that would work.
